The persimmon, unlike the pomegranate, is a climacteric fruit, it is harvested when it reaches physiological maturity but continues to evolve to the point of consumption after harvesting. As persimmons are climacteric fruits, they continue to ripen after harvest. Therefore, store the firmest pieces at room temperature and wait a few days for them to soften. If you receive a piece ready to eat, you can put it in the refrigerator or eat it right away. Pomegranates are a non-climacteric fruit, the fruits are only harvested when they are fully ripe and have reached their optimum sugar content. You can keep them for at least 2 weeks, in the refrigerator for up to 4 weeks.
